- 1 can lentils (drained and washed)
- 3 tomatoes
- 2 roasted or 1 fresh red peppers (capsicum)
- Small red onion
- Sliced black olives
- Chopped parsley
- Garlic salt
- Lemon juice
- Olive oil
Roughly chop the tomatoes and peppers. Finely chop the onion and parsley.
Mix all the ingredients, seasoning to taste with the oil, garlic salt and lemon juice.
