• 1 can lentils (drained and washed)
  • 3 tomatoes
  • 2 roasted or 1 fresh red peppers (capsicum)
  • Small red onion
  • Sliced black olives
  • Chopped parsley
  • Garlic salt
  • Lemon juice
  • Olive oil

Serves 4

Roughly chop the tomatoes and peppers. Finely chop the onion and parsley.

Mix all the ingredients, seasoning to taste with the oil, garlic salt and lemon juice.
