The almond feta turned out to be something like the failed cake your granny might make when she should really have turned in her baking tins.
Next week I’ll try tofu and brine it.
Anyway, the rest of the meal was OK and at least the ‘feta’ didn’t wreck it. It was tasteless, but I guess it added protein. The dish was a puff pastry base (bought), caramelised onions, red pepper and the feta, served with a salad.

…why do people who have not eaten cheese for months declare that their recipe is anything LIKE!!! the foodstuff it’s supposed to be? The recipe I used was a variation of many on the internet which uses almonds. End of rant….
