So I had a few cupfuls of grated carrot and beetroot in the fridge that needed using up. With the addition of some brown rice and a can of chickpeas, I russled up a tasty loaf. It was a bit crumbly, but very tasty.

We just ate it with what is probably the last asparagus of the seaso, plus a plain greeen salad and a potato salad made of potato, radish, red pepper and Veganaise. I prefer home made mayo using this recipe. but the Veganaise was in the fridge and I was lazy.
