I was lazy today and didn’t feel like cooking. Fortunately, I love pies have brought out not one, but two, individual vegan pies.

Tonight’s was lentil mince and cheese. Next week will be chick pea and spinach.

The pastry is made with coconut oil and is pretty hefty, but the filling is delicious. I made a gravy wwith veggie stock with wine, cornflour and apple jelly.
